Looking back at my ChefMom articles from the month of August definitely feels like it was almost a vegan month!  It’s fun to throw in some all-plant-based options at dinner sometimes (hello Meatless Monday!), or really any meal for that matter.  Enjoy!

Vegan Apple Cranberry Power Cookies

Vegan apple cranberry power cookies – these guys were a huge hit, and I make a batch about every other week.  Delicious and nutritious!

Peaches and cream donuts with raspberry glaze – peaches in donuts – need I say more?!  I love that they use frozen peaches too, so you can have these year-round!

Garden cherry tomato and chicken one-skillet dinner – not vegan, I know, but delicious nonetheless!

Roasted Strawberry and Peach Cobbler

Roasted strawberry and peach cobbler – I didn’t make this one vegan, but you can totally sub a vegan-friendly butter and almond milk!  I’ve done it before and it’s just as delicious!

Summer jam palmiers – puff pastry + summer berry jam.  SO GOOD.

Yay for an almost vegan month! I’m not vegan, but I’m challenging myself to cut out meat and dairy right now. I really appreciate seeing more recipes like these!
