Ending the Way It Started

Hey guys!  It’s finally Monday afternoon (woohoo!)  It’s such a gorgeous day here today; you would never have guessed that it was cold and snowy last night and this morning!  In fact, I’m so happy with the weather today that I decided to do one of several giveaways I have planned for y’all :)

Lunch was a black bean burger on a sandwich thin with provolone, a pile of carrots, and a Breakstone’s Cottage Double:

And I know it’s probably better for me to just do regular cottage cheese and homemade jam, but you gotta love the convenience of it together!

Tres yummy.  I took a walk down to Target (maybe 3/4 of a mile from the office?) and took it slow, and guess what?!  No knee pain!  I’m hoping taking the weekend off was a good thing and maybe it’s gone forever :)   I celebrated with the rest of my Green(ish) Monster from this morning that I froze:

It was just so-so.  I definitely prefer mine freshly blended, but I still felt good about eating this as a snack!  And see?  I’m ending my work day the way it started!

I’m a peanut butter fan so I’d choose that one – most definitely!
I really like incorporating more natural seeds and nuts into my meals each day. So healthy!
