Weekend Break for a Porter Gal

Morning everyone!  How are you?  I’m so glad I took a little tiny break from blogging yesterday…I just needed to enjoy the day with Nate at Winter Park and then relax when we got home.  So let’s start over, shall we?

Lunch on Friday was a sandwich thin with a slice of provolone, some steamed spinach, marinara, and a Boca mushroom patty.  On the side I had some carrots, and there may or may not have been a spoon of almond butter eaten with them :)

During the afternoon we ended up leaving to go check out next year’s line at the company showroom, and I left from there to go home.  There was enough daylight to take the dogs to the dog park right by our house, and I was so excited they’d get a chance to run!  Turns out when snow melts it turns to water, which can create this phenomenon called “mud” when it’s mixed with dirt…who knew?  Well, Bunker and Keira did indeed sprint ALL OVER the dog park and got so unbelievably muddy.  I knew the second I stepped out of the car that they’d be getting baths, which is something I dread because it’s something that THEY dread!  When we got home, I had to leave Keira in the garage while I dragged Bunker (all 100 lbs of him) upstairs for a bath.  When it was her turn you’d have thought that I was hurting her!  I’m tellin’ ya, there are a lot of people who pay good money to have someone rub them down and tell them what a good boy/girl they are.  Just sayin’ is all!

By the time I finished bathing the dogs my legs were worn out.  It was basically 30 minutes of standing in a squat with a constant leg adduction squeeze to hold them in one place.  Thus, I did not complete the 30-day shred I had on the schedule for the HPJ workout today.  I did, however, walk around the dog park (in the mud mind you) for an hour before the shower fiasco.  I felt that it was actually WORK, and therefore I didn’t feel bad eating the cheese side of the small pizza Nate brought home:

AND he brought one of my favorite beers home too!  This is a local beer from Tommyknocker Brewery in Idaho Falls, CO:

That was dessert and then I fell asleep on the couch.  Yes, I am a lightweight, and yes, Nate knows this :)

We got to Winter Park around 8:30 and were too impatient to wait for a bus from the parking lot, so we hiked with our ski boots, skis, and poles to the main lift.  I’d say it was probably around 3/4 of a mile from our car, but all downhill, so it wasn’t too hard.  We skied for a good 2 hours before stopping for lunch at the lodge.  I got the vegetarian curry with extra veggies instead of tofu (I’ve decided that I really don’t like the texture):

It was actually really good!  I ended up eating about 3/4 of the bowl and then stopping because the white rice at the bottom was grossing me out since it was really soft and gooey.  Blech.  But the flavor was actually really good!  Nate got a slightly healthy chicken burrito and then de-healthed it with an astronomical amount of orange cheese sauce:

Now, I love my fair share of overly processed products, but cheese sauce is NOT one of those.  Thankfully he scraped most of it off and only ate what was left on the tortilla!  We skied for another couple of hours, but towards the end my legs were shaking from exhaustion.  We decided that we were also too impatient to wait for the bus BACK to the parking lot, so we hiked up the huge 3/4 mile hill with our ski boots, skis, and poles to the car.  At 9,000 feet.  My lungs were pretty upset with me for that one…but I figured I needed to make up for the lack of intense exercise on Friday!

When we got home I had a Rogue Mocha Porter:

‘Twas perfect!  I sipped on that while I made some pita chips (which is now a new favorite recipe…thanks Ellie!):

And GUACAMOLE!!! Oh boy, do I love me some good guac:

  • 2 ripe avocados
  • 1/4 cup salsa (your choice; we used 365 brand medium)
  • salt/pepper/garlic powder
  • twist of lime

Mash.  Plate.  Savor.  YUM!

And while that was being consumed, I also made my actual dinner, a piece of vegetable lasagna (Kroger store brand) and a Morningstar Farms Tomato Basil Burger:

This was good, but the flavors actually clashed a bit.  Next time (read: tomorrow’s leftovers) I will just do the lasagna since I’m sure there’s plenty of fat and protein in the cheese :)

Finally, this morning was a bowl of simple whipped banana oats:

I know there have been good and bad foods integrated into the past couple of days, but I fully plan on getting back on track with healthful eating today.  Besides, it’s the weekend, and I feel like it’s OK to splurge a bit!

What are your thoughts on “cheat days” or “cheat meals”?  Do you feel like you need those to stay on track, or do they do more to just derail your healthful eating habits? I know that I usually need at least a meal where I can eat whatever I want, but sometimes I do find it hard to get back on track again!

Mountain Madness

Morning everyone! How are ya? We are headed off to the mountains for some mountain madness skiing (that’s not code or anything, I just thought it sounded cool).

First we stopped at Starbucks for some brefix! I got a huevos rancheros wrap with beans, eggs and cheese and a cup of coffee!

I’m not sure what this post will look like since I’m not iPhone literate, but Nate and I are pretty stoked to ski and did a little photo shoot!

Hope y’all have a fabulous Saturday! What’s your favorite breakfast item? I know I love savory breakfasts like huevos rancheros, but oatmeal is growing on me!

Fake Meatballs

HAPPY FRIDAY!!!  Oh.my.gosh I am so glad it’s the weekend!  I know I wasn’t at work yesterday, but turns out it’s hard work letting a scared puppy out to painfully use the bathroom every 20 minutes.  Being a fur-mom is hard!

Yesterday in the midst of mentally planning dinner I made pecan pie bars for work treats:

They’re AMAZING, and I used this recipe, but made sure to double the pie part since I was making them and that’s just how I roll!  They’re so good…I had a bite of Nate’s piece this morning and will likely be getting my own darn piece soon :) While these were baking I did my workouts that I listed on the HPJ page.  That Whittle Your Middle mess from Oh She Glows is HARD!  ‘Specially after you just finished doing the harder version of the exercises in 30-Day Shred…but the great news is I did it all and I felt incredible…invincible even!  Thanks Angela!

Dinner was Tortellini Primavera from Eating Well:

I made some meatballs for Nate based on Ashley’s meatball recipe, but I was feeling left out!  So I warmed up a Morningstar Farms Tomato Basil burger and cut it up for my “meatballs.”  I didn’t try the real ones, but they smelled amazing.  When I was cleaning up the kitchen I was SO CLOSE to just popping one in my mouth…that’s OK, right?  Just one?  NO! I made a vow for Lent, and I am glad to say I kept it…with a lot of prayer though!  I tried to get a little fancy for dessert:

It’s the last of our low-fat vanilla bean ice cream with about 1/3 of a cup of chocolate chips melted with a tsp of butter.  Turns out this does NOT keep the chocolate creamy, so it hardened up on top of the ice cream pretty much instantly.  OOPS!  Still tasted good though :)

I woke up early-ish this morning to do Day 2 of Whittle Your Middle and some yoga…lots of floor work today, but I feel very relaxed and rejuvenated already :)   Breakfast was another black bean burger!  I was planning on topping it with an egg (Christie said it was good that way!), but I was running late and therefore did not:

Thanks so much for all of your sweet comments about hoping Keira’s feeling better!  She was pretty down and out yesterday, but doing much better today!  She even slept through the night with no problem…hurray!  I’m so excited about 3 things in particular:

  1. Our friends Jason & Stephanie found out they’re pregnant!!!!!  This is a huge deal because they’ve been trying for 5 years, and found out yesterday that they’re now expecting!  There were a lot of happy tears and lots of praising God :)
  2. I wrote my first guest post on Then Heather Said.  She said I had swagger.  I was excited :)
  3. We’re (hopefully!) going to ski Winter Park tomorrow!  Apparently their base is now 10 inches more than what it was the last time we were there, and it’s been snowing the past 7 days.  Yay for skiing!

What are you happy or excited about today?  If you can’t think of anything, what are your weekend plans? We’re going to celebrate with Jason & Steph no matter what tomorrow night and I’m so incredibly excited!  I’m going to be a friend-who-calls-herself-an-aunt! :)

Back in Action

Hey guys! Be sure to check out my guest post at Then Heather Said in her “More Than” series!!!

So Keira and I are back home and going outside every 20 minutes or so :(   It totally kills me to see her not feeling great (she’s been really pouty and sleepy all day) and I can only imagine what it’s going to be like when we have sick kiddos!  I’ll spare the intimate details, but she’s got a bladder infection.  Good news is the vet thinks that’s all it is, so we have 7 days worth of antibiotics that will hopefully cure everything!

Last night for dinner we had black bean burgers and sweet potato fries!  I know I said we’d also have kale chips, but there just wasn’t enough time.  I’ll explain that later…but I knew upon getting home what kind of cheese I wanted on my burger!

I seriously love this stuff…it’s so easy to spread, super flavorful, and the portions are the perfect size.  What’s not to love?  Nate actually did most of the cooking since I was doing the 30-Day Shred and yoga per my HPJ page :)   He’s such a sweetheart!  We made black bean burgers a la Christie, and they were fabulous!  Here they are cooking away:

We had some frozen sweet potato fries with a little salt and a lot of pepper, just how we like it!  ‘Twas a delicious dinner!  Nate even said he liked the burgers, which is saying a lot since he doesn’t usually like to have a dinner without meat.

Now, the reason we were short on time was because we went and saw Valentine’s Day!!!

Honestly, I didn’t think this was as good as it was cracked up to be.  It took a while for the movie to really start up, and it just felt like everyone was so fake (except of course for Julia Roberts; she was fabulous as always).  Towards the middle it really started to pick up and at the end I really enjoyed it.  Nate and I shared a popcorn (awwwwwwww) and just enjoyed our little date!

This morning we woke up and I started doing my yoga since I got up early enough to do it.  Keira kept whining, so I let her out and finished up.  When I went upstairs I noticed that she’d peed on the floor!  Then we kept noticing all of these places where she’d peed (she’s been housebroken for at least 6 months) and some other things – trying to keep it clean here – so I ended up taking her to the vet TWICE to get checked out.  She’s fine now, but is going to be resting the rest of the day while I get caught up on work stuff from home.

Breakfast was another black bean burger!  SOOOOOOO good:

And mid-morning when I brought Keira home so I could get her to pee in a cup I made some kale chips for a snack:

These were so good!  I didn’t really know what to expect, but they sure did surpass whatever expectations I had!  They seriously just melt.in.your.mouth and have a nice healthy flavor to them :)   I don’t think Nate would like them, but I’ll definitely be making them in the future!

I just got back not too long ago from our second visit to the vet, and Keira’s asleep on the floor beside me.    I am having to take her out every 20 minutes or so, which is no bueno.  I just feel bad for the girl!  Tonight I’m going to make tortellini with TONS of veggies for dinner (another Eating Well recipe!) and then I’m going to sit up in the office and do tax stuff with Nate while simultaneously organizing all of our files and folders and papers.  That’s right people…I got skillzzzzz. :)   Oh, and for lunch I ate the rest of the sweet potato fries (about a handful) and a Lean Cuisine pizza and forgot to take a picture.  Oh well…I feel like a slacker, but everyone once in while I do actually eat things that I don’t document!  So it goes…

If you could pick any actor/actress to play you in a movie, who would you pick?  Why? I know I would pick either Julia Roberts or Sandra Bullock…it’s gotta be someone from the South since that’s where I feel like I’m from :)

My Sick Baby

My little Keira is sick today…she has a pretty severe bladder infection, and so I will just have to blog about the eats a little later.  For now, here are some pics of the baby girl!

Nate and Bunker are up at work and I’m letting Keira out every 5 seconds to pee…Wish us luck at the vet’s in a few!

A Half Eaten Day

Hey everyone!  Thanks so much for the awesome responses to my HPJ post…I’m very excited to see where it takes me!  Like I said, I don’t really care if I end up fitting in my smaller pants (no sizes, remember?! :) ) but I do want to continue to be my healthiest self!

Today for lunch I was so excited to eat the Jazzberry Salad that I got for free at work yesterday!

Spinach, red onions, strawberries, raspberries, roasted almonds, avocado, jalapenos, and berry dressing.  Sounds amazing, right?  And so pretty too!

After about 5 bites I didn’t like it, but I kept eating the spinach leaves because I figure I need the iron and fiber and whatnot.  Halfway through I was done, though.  It just wasn’t a great mesh of flavors!

Not to be put off, I turned to my last sweet potato to save the day.  Microwaved for 7 minutes on high wrapped in a paper towel:

And it STILL wasn’t done!  I was shocked!  But, I didn’t feel like re-heating it and I didn’t feel like making something else to only eat half, so I ate the done parts of the potato and sulked.  I hate it when I’m really excited to eat something and it turns into a major fail!

One thing that did NOT disappoint though?  This bad boy that I got in the mail yesterday!

I love Bon Appetit, and have already found a slew of recipes I’m just dying to make!  First up I have an eggplant to use, so I’m thinking eggplant parm (the one on the cover) for dinner sometime this week!

I just got done with my walk, the first part of my workout, and am now snacking on the yogurt/cranberries/chocolate chips/coconut/GrapeNut madness that I love:

Once we get home I’m going to do the 30-day shred part of my workout, and then make dinner.  On the menu I’ve got black bean burgers with spinach on top, kale chips, and sweet potato fries!  Wahoo for a great dinner that will be COMPLETELY eaten!  And I’m going to work on a product review I’m really excited about as well.  I think it’s going to be a good night :)

When you just don’t like something but it’s the only thing you have to eat, what do you do?  Eat it because you know you should?  Toss it because it’s not what you want to eat?  Do you ever just eat things for the nutritional value? I know I try not to force myself to eat anything, but today was a special case where everything else available was meat :/

Livin' in the HPJ

Good morning guys!  How are y’all?  I know I’m so glad it’s Wednesday…means I’m just that much closer to Friday!

Last night was so much fun at our community group!  When we walked in we were instantly greeted by these amazing chocolate chewy cookies that Stephanie’s mom made.  Don’t they look amazing?!?!

And a HUGE bowl of grapes!  I love grapes.  I am actually really picky about my fruit, and these were totally up to standard:  nice and juicy and crisp!

When they pulled this tray of bread & butter out of the oven I knew I was in for a wonderful comforting dinner:

But before I go there, I ate a HUGE plate of speghetti and marinara!  SO GOOD.  It was exactly what I didn’t even know I wanted, too!  By the way, I love regular spaghetti noodles so much more than thin spaghetti.  Nate is of the mindset that thin spaghetti is better because it cooks faster and therefore gets into his stomach more quickly.  However, I adore the texture of great al dente spaghetti noodles!

And the surprise thing I made?  It’s a CHEESECAKE that I made using Ina’s recipe :)   I love Ina Garten, she’s by far my favorite Food Network gal!

Mmmmmmmmmm…perfectly creamy and wonderful with my strawberry jam on top!

Why the secret?  Well, our friends Murphy and Lauren got engaged!  The cheesecake was gonna be a surprise for her (Murphy told us her favorite dessert was cheesecake :) ), so I didn’t want to spoil it by advertising on the blog.  Their story is so awesome, and she even made a “ring” for him out of rope from New Zealand for when he proposed!  She didn’t want him to be without an engagement ring too…how cute is that?!?!

We had a great time talking about marriage and just how our lives are going.  I’m so thankful to have such a wonderful group of friends to live life with!  It was a hard move from Dallas to Colorado, but thanks to our great friends we feel like we’ve been here forever!

I didn’t do a workout at all this morning because we got back really late last night and I knew my body just needed sleep.  I’m planning on walking per usual this afternoon and then doing some 30-Day Shred tonight before dinner!  Breakfast was an egg sandwich:  whole wheat English muffin, 1 Tbsp goat cheese, Frank’s hot sauce, and 2 eggs:

We had time for me to take a picture with the puppers!  I don’t usually straighten my hair, but I had time this morning, so I figured we better take a picture so it’ll last longer ;)

I love that Bunker blinked and Keira’s trying to attack the treat in Nate’s hand :)   I also had a mug of hot chocolate and coffee for a little pick-me-up!

SO, I’ve come up with a new page on my blog to document my month-ish long journey to fit into a pair of pants that I haven’t been able to fit into for a long time.  I’ve termed this the “HPJ” aka “Healthy Pants Journey.”  I 100% LOVE the “Size Healthy” mantra I’ve garnered from Angela at Oh She Glows, and have decided to use it to encourage myself in my next stage of weight loss.  Since November 2009, which incidentally is when I learned about health blogging and started to do it, I’ve been going through the process of quitting fat-talk, listening to my body, and eating healthfully.  I’ve definitely started to lose some of the weight, but I haven’t been working out consistently enough to really amp up the loss.  My biggest goal through all of this is to beat my disordered eating habits once and for all and live my healthiest life possible.  I mean, I’m only 26 for crying out loud!  However, the next goal is to feel comfortable in my body, something that I’ve never felt, but I know I’m on the road to getting there now.

Let me emphasize that this is not about my size.  I could care less if I ever fit into those pants again; however, I do know that the weight I’m currently at is not a healthy one for me physically or mentally.  I do know that I can live a healthier, happier life and I can fit into my size healthy pants.  And so, I’m going to be documenting my workouts on the HPJ page to hold myself accountable and to show myself that this is something I CAN DO.  I can beat this disorder; we all can!

What do you consider your healthy size?  Do you measure it with a number or with a feeling?  Do you count calories or listen to your body? I’m going to need all the cheering I can get!  Like I said, I WILL beat this and I WILL be happy!  Life is too short and I am too blessed to not do that :)

Good Idea or Bad Idea?

Hey guys!  Hope your Tuesday’s been a good one :)   Thanks so much for all of your uplifting comments about what you want to see more of on the blog…you really know how to make a girl smile!  I’ll just keep doin’ what I’m doin’ :)

Lunch today was another Hot Chile Grilled Cheese made in the toaster oven, and a super juicy tangelo!

This was such a great lunch…I really can’t get over how awesome this sandwich is!  I think I said it before, but it’s basically a deconstructed chile relleno, and it’s face-rocking good!  You should go make it now :)   Tonight we’re going to our community group, and I’m taking a FREE SALAD that I got from lunch just in case there’s nothing meat-free being eaten.  I bet there’ll be something good, but I’m gonna take it just in case!  I made a little somethin’ last night that I’ll be sharing later, but it’s a secret still ;)

SO, on to the reason for the title of this post.  Please observe the item wrapped around the waist here:

This picture is NOT so that everyone can check this guy out.  I was on my walk today and kept having to remind myself to pull my abdominal muscles in, and started to get pretty frustrated with myself.  Now, I know these bands are mainly marketed as “slimming you down” by sweating out all the water in your stomach (really guys?  really?), but I was thinking about hitting up Walmart for one for the sole purpose of wearing it as a reminder to keep my core strong and firm.  I don’t want to wear it to lose weight or anything, but mainly as a way to strengthen my core.

What are your thoughts on this?  Do you think it would be a better idea to just get over it and constantly remind myself?  What fitness products have you tried?  Which ones have worked?  Which ones haven’t? Confession:  I’ve actually owned one of these bad boys before, and although it didn’t make me “lose weight” in just my stomach, I do feel that it helped me to remember to pull my core in during a workout!

Whatcha Want?

Good morning everyone!  How are you now that it’s not Monday anymore?  I know I felt a lot better about life this morning… :)

Last night’s dinner was soooooooooooo good!  I would very highly recommend this sandwich from Eating Well any time since it rocked my face!

We served it (the Hot Chile Grilled Cheese, that is) with a bowl of fresh fruit salad – strawberries, blueberries, and orange.  SO good and SO colorful!

Here’s the side view of the sandwich.  It doesn’t do it justice though…the only thing I would change is a TAD more salt (because that’s how I roll).  Also, if you are married to guy like Nate or Mr. How Sweet who really just wants meat, grill a chicken breast, and butterfly it and add it.  Nate enjoyed his as well!

Right after dinner I hit up the grocery store for some much needed shopping.  I went with a full-blown list this time, and it was a quick and relatively short trip…hurray!  And I got to talk to my parents which is always a huge plus :)   I love them :)   While I was there I found this tea, which sounded fabulous:

Honestly, this was the perfect dessert…and no sugar/sweetener needed!  I had my peach tea in a Waikiki Beach Starbucks mug…I think I’m ready for summer!  I made something awesome last night…but I can’t share it yet since it’s a surprise for someone else!  Can’t wait to share tonight!  We finished up the night with some snuggling and went to sleep around 11, which is actually really good for us!  GO SLEEP!

I got up this morning a little sore, so I did 30 minutes of yoga instead of 30-Day Shred.  Hopefully I can do the shred tonight before community group!  Breakfast was a breakfast cookie…I haven’t had one in so long!

This one was really good…I don’t know what I did differently, but there was almost a hard shell on the outside and the inside was super gooey and yummy.  Whatever it was I’m glad it happened!  We got to work early today, and I had a mug of my favorite tea with a fabulous message on the paper:

I think this was a cool message to share with everyone today, no?  Wisdom is an invaluable tool, and the good news is we all have some.  I’m so thankful for the wisdom that you all share on here every day!

My question today is super important to me.  One of my biggest reasons for having this blog is to continue to facilitate community and interaction among the people who read this blog.  The question is:  what would you like to see more of on here?  Pictures, nutritional info, product reviews, recipes…you name it!  I want to make sure that I’m giving back to the community that’s given so much to me! :)

Lunch of Champions!

Or so I think anyway :)   I am SO happy with my lunch today; I really feel like I ate well and it filled me a LOT!  What more can you ask for, right?

Lunch was my yam from the other day, a honeycrisp apple, carrots and 1 Tbsp almond butter, and a naval orange.  LOTS of orange in this one!

Over my lunch break I walked to Whole Foods to get some stuff for dinner tonight, then walked to Target, and then back to the office.  Not really a challenging workout, but it felt good to get out and walk!  Right now I’m snacking on some plain yogurt with coconut, chocolate chips, and GrapeNuts.  YUM!

I’m planning on making this for dinner (straight out of Eating Well), along with a fabulous fruit salad!  Then I get to go grocery shopping (anyone else get excited about grocery shopping?!?!) and hopefully cleaning the office a bit.  I kept talking about how I was going to do that all weekend and….yeah….it didn’t happen.  Oh well!

The reason I was so stoked about my lunch is because I really didn’t eat a healthy dinner last night and I totally feel like I made up for it with today’s eats.  Does anyone else ever do that?  Make up for a bad meal with a good one?  Either way, is that a healthy behavior?  I’d love to hear your thoughts! In the meantime, I’m counting down the minutes until my fabulous dinner tonight :)
