Pistachio Covered Chocolate Dipped Apples

This past week AT&T (our internet provider) had a “network outage” which means that I have officially been without internet and TV in my home for going on 3 days. 3 DAYS!

Although this has been kind of a hassle since my side job is all done online, I have to admit once again that going without has been kind of a nice eye-opening experience for me. For the past 3 days I’ve watched The Family Stone and The Holiday on repeat – partly to just have some background noise in the house, and partly because I’m sadly obsessed with them both. Even more interesting? I’m not even close to tired of them. I’ll probably watch them again tomorrow. Unless the internet comes back.

Anyway, Wes and I have been playing nonstop and hitting up Starbucks whenever I need to jump online. The newest development there is that Wes has started flirting…I don’t think I’m ready for this!

Turns out I also have a lot more time to read and cook things out of my Cooking Light magazine too! There’s a whole section of quick chocolate fixes that are just perfect for satisfying a sweet tooth without breaking the calorie bank ;) These apples are a big hit right now, plus they’re so stinking pretty. Good food that looks good – that’s what I like!

Now I’m off to munch my baby’s neck and see if I can make him laugh a billion times. Turns out going without internet isn’t so bad after all ;)
