Beer Marinated Grilled Chicken

Did you guys know that it’s summertime?  And that things like grilling are sooooooo in right now?  Grilling is the little black dress of summer.

 

To me, though, grilling is so much more than just food.  It’s an experience that encompasses all of the senses.  You obviously have taste – I mean, we are grilling food after all.  But the smell of the grill heating up, the heat from the coals or grate, and the site of the heat in the summer sunshine – those are all pretty big indicators of fun and big flavor to come.

 

Plus, like, the chicken is really totally awesome.  Make it now :)

BEER MARINATED GRILLED CHICKEN

  • 2 whole chicken legs and thighs, skin on
  • 1 can beer of choice (we used Bud Light Lime since it was in the fridge)
  • 2 tsp salt
  • 2 tsp pepper
  • 2 Tbsp olive oil

Lay the chicken thighs in a large baking dish and cover with beer.  Sprinkle with salt and pepper and then drizzle with olive oil.  Marinate in the refrigerator for 6-8 hours, turning once halfway through.  To cook heat a grill to about 400 and rub the grate down with a bit of oil.  Lay the chicken skin-side-down on the hot grill.  Cook the chicken for around 30 minutes, turning every 7-10 minutes until the juices run clear.  Serve with a side salad, grilled corn, or a big hunk of watermelon!

Grilling is my happiness because my husband and I batch cook our proteins for the week – so we whip out the grill and grill up a huge flank steak and some chicken and have healthy meals all week long. Even during our recent kitchen renovation, eating in was NO problem. Love the grill!

I love grilling because of the fact that the sun shines when we BBQ, well mostly. We have grilled in the rain before, but I prefer the sun. Also, it’s the only time my brother and dad “cook” and I have pleasure in seeing men working for once, especially since in our household it seems to be the women who do all the work ;)
Those potatoes look awesome too!

I actually love to grill, and my husband and I grill year ’round, except if the snow is too deep to get to the grill! My husband’s title is The Grillmaster, but when he is coming home late or out of town I grill without him! In fact, everything he knows about grilling he learned from me! ;-) I’m the one who reads food blogs and scours the internet for recipes all day! I’ve made beer can chicken before, but never thought to marinate the chicken in the beer. This recipe looks so delicious, and I can’t wait to try it. Thanks for the great recipe, Heather!
