Beer Marinated Grilled Chicken

Did you guys know that it’s summertime?  And that things like grilling are sooooooo in right now?  Grilling is the little black dress of summer.


To me, though, grilling is so much more than just food.  It’s an experience that encompasses all of the senses.  You obviously have taste – I mean, we are grilling food after all.  But the smell of the grill heating up, the heat from the coals or grate, and the site of the heat in the summer sunshine – those are all pretty big indicators of fun and big flavor to come.


Plus, like, the chicken is really totally awesome.  Make it now :)


  • 2 whole chicken legs and thighs, skin on
  • 1 can beer of choice (we used Bud Light Lime since it was in the fridge)
  • 2 tsp salt
  • 2 tsp pepper
  • 2 Tbsp olive oil

Lay the chicken thighs in a large baking dish and cover with beer.  Sprinkle with salt and pepper and then drizzle with olive oil.  Marinate in the refrigerator for 6-8 hours, turning once halfway through.  To cook heat a grill to about 400 and rub the grate down with a bit of oil.  Lay the chicken skin-side-down on the hot grill.  Cook the chicken for around 30 minutes, turning every 7-10 minutes until the juices run clear.  Serve with a side salad, grilled corn, or a big hunk of watermelon!
